Tannins and Wine

Features

In oenology, tannins are produced according to the specifications established by the regulatory institutes of the winemaking activity of each country. These oenological tannins are used for the clarification of wines and also to improve their gustatory characteristics after an aging of a few months in vats. Currently, these preparations play an important role in the oenological products industry and in winemaking activities. Tannins confer specific taste characteristics grouped under the term astringency. Astringency is defined as the sensation caused on the tongue by the formation of complexes between tannins and salivary glycoproteins. Another of their advantages is that they form complexes with proteins, contributing to the protection of tissues against microbiological attacks. They also have antiradical power and the capacity to consume dissolved oxygen; in this case they have antioxidant properties that are beneficial for oenology. The quality of oenological tannins is given by their richness in total polyphenols, but also by the finesse of their active principles, that is, by the specific characteristics of our product.
Thanks to a blend of selected woods, UNITÁN has managed to extract the appropriate tannins to confer the aforementioned properties. The taste properties of oenological tannins are one of their main characteristics. Each variety of oenological tannin gives wines different taste characteristics, with astringency as the common denominator according to the nature of the tannin. This is one of the most important organoleptic properties of tannins, since it is what gives wines their character, defining their suitability to accompany different types of food. The opinion of French winemakers: «Red wine highlights the virtues of noble grape varieties, and with powerful tannins, wood and fruit combine well.» In red wines, noble vintages are appreciated, and with powerful tannins, the wood and the fruit combine appropriately. «Tradition demands quality.
